RANGES 


Gas-fired ranges are one of the most versatile pieces of cooking equipment which is why they are commonly found in chef-driven restaurants, in kitchens that cook- to-order, or venues that feature a broad menu.


The versatility of the gas range cooking platform allows a chef to perform virtually


all primary


cooking operations: sautéing, pan- frying, boiling, reducing, stewing, steaming, simmering and stock pot work. They are equally suited to preparing a single order of bacon and eggs, quickly cooking gallons of soup or stew, or steaming rice, seafood, and vegetables.


Ranges are generally divided into two categories – Heavy-duty and Restaurant ranges. Heavy-duty models, sometimes called modular or sectional ranges, are commonly installed in a battery of several gas ranges with a variety of cooktop configurations and ovens, and heavy-duty fryers and broilers. They are frequently found in hotels and large restaurants.


Restaurant ranges are medium- duty multipurpose gas appliances typically specified for smaller restaurants, sandwich shops, churches, and social clubs.


Gas range tops can be configured with open burners, a griddle or fry top, hot top, French top, and on some models, planchas. The range base can incorporate conventional or convection ovens, refrigeration, or storage compartments – without taking up additional floor space.


When it comes to selecting the energy source for ranges, gas is the professional chef’s preferred choice with its instant-on, instant- off capabilities, infinite visual heat control and the faster recovery provided by gas burner technology.
