Rack and tray ovens are once again riding a wave of popularity. Demand is stimulated by the rapid growth of centralized kitchens, cook-chill systems and exhibition baking and roasting operations.
Manufacturers offer gas models in various sizes and capacities to conform to more applications than ever before. These ovens are capable of producing thousands of identical products or a variety of menu items quickly and with a high degree of product quality and consistency within the same cooking cavity.
Rack ovens are basically tall, stainless steel boxes capable of high production in a relatively compact space. They are ideal for baking and roasting as well as rethermalizing many food products prepared in cook-chill systems. They are available in single and double rack designs that can handle 10 to 52 standard bake pans within a single cavity.
Products to be cooked in rack ovens are placed in pans that are loaded on mobile racks. The loaded racks may be kept in refrigerated storage until they are rolled into the oven’s large vertical door. The rack is connected to a motorized lift that slowly and smoothly rotates in a carousel motion. This contributes to the cooking speed and consistency of products. In some models, the rack remains stationary. Product consistency and cooking speed is then achieved through the use of a multispeed blower system that circulates heat evenly.
Revolving tray ovens are equipped with a large horizontal door that can be lifted up and out of the way, or positioned at a 90° angle to provide a convenient loading or unloading platform. Products are placed on revolving trays that are stabilized to move evenly through the oven chamber in Ferris wheel fashion. Trays can support up to 500 pound loads.
