Steam is one of the most efficient ways to transfer heat energy and is a healthy way to prepare a variety of foods such as seafood, rice, pasta, meats and more. It brings out the best in vegetables — enhanced color, better flavor, natural texture — and it retains food’s vitamins and minerals. Gas compartment steamers will cook, defrost, and rethermalize foods without drying them out. They seal in moisture and increase product yields.
The list keeps growing of gas steamer models, types and sizes available to foodservice operators. Pressureless(convection)steamers cook foods at the relatively low temperture of 212°F. This fast but gentle cooking method is ideal for seafood and vegetables.
Pressure steamers use higher temperatures, resulting in faster cook times for some foods such as rice, pasta and potatoes. Low pressure steamers operate at 5 or 6 psi and generate temperatures of 230°F. High pressure steamers build pressure up to 15 psi and reach 250°F.
Several steamer manufacturers have hybrid models that can function in either the pressure or pressureless steam mode.
In recent years, a new subcategory of “boilerless” steamers was introduced. These gas-fired models generate steam inside the cooking compartment not in an adjacent boiler or steam generator. They require water

This boilerless convection steamer has many advantages over competing brands. It is the only steamer on the market today with modulating capabilities, which means the steamer will automatically modulate between 10,000 - 60,000 BTUs (depending on the cooking load) for the fastest possible cooking time while maintaining an ENERGY STAR rating. It can also be set at 200ºF and used as a holding cabinet, with only a minute required to resume cooking.
