GAS APPLIANCE CONTROLS
At the heart of all gas foodservice equipment is the appliance control. Modern gas equipment controls have evolved beyond the simple on/off valve to more sophisticated devices that will provide greater temperature control, help reduce gas consumption, and increase energy efficiency.
The Henny Penny PFG-691 fryer is the only gas pressure fryer on the market that cooks up to 8 head of chicken or 24 lbs. of food in a single load. Built-in filtration system filters and returns hot oil in less than four minutes with no extra pumps or pans and no handling of hot oil.

Some of the recent developments focus on thermostatically-controlled valves that improve operation by regulating the flow of gas to the appliance. Some valves are designed to quickly achieve set- point and then turn off; others will provide only the amount of gas required to accurately maintain the desired temperature.

A thermostatically controlled on-off valve, the GV31 ignites at maximum BTU rate until the set point is achieved, and then it snaps off. The GV31 is fully enclosed for added protection in harsh environments. Typical applications include fryers, ovens, and bain maries.

Maxitrol’s GV30 is a thermostatically controlled, modulating valve that maintains set point temperature. Once set point temperature is reached, the valve supplies only the amount of gas required to maintain that temperature. The GV30 is fully enclosed for added protection in harsh environments. Applications include ovens, bain maries, and griddle plates.
