Gas-heated steam jacketed kettles are a flexible, efficient and practical way to prepare a variety of menu offerings. They offer the benefits of single-pot preparation, boiling and simmering of high liquid products like soups and stews and are ideal for many cooking applications.


Anything that is typically boiled in water or other liquids such as clams, oysters, potatoes, corn-on- the-cob, brisket, corned beef, vegetables, bagels and more can be done quickly and efficiently in a gas steam kettle. Kettles are also well-suited for making savory base stocks and heat-sensitive foods such as cream-based sauces and sugar-based desserts and icings.


Steam kettles take advantage of steam’s heat transfer properties and high heat content. The steam is confined to the sealed inner jacket within the kettle. As steam enters the jacket, it condenses on the inner surface, transferring its heat to the metal, which, in turn, transfers the heat to the food placed in the kettle.


 

The secret to a steam kettle’s high efficiency is the pressure control of the steam jacket. The steam’s temperature rises as the steam pressure increases allowing you to raise temperatures from 212°F at 0 psi to 298°F at 50 psi. Low temperatures let you simmer foods while high heat settings let you braise meats or quickly bring other foods to a rapid boil.


Steam kettles are available in stationary models with sanitary draw off valves for draining liquids from the kettle, or tilting models that allow the contents to be poured into pans or containers. They are available in compact tabletop or stand-mounted models.
