RETHERMALIZERS  


Gas rethermalizers reconstitute frozen or refrigerated foods for foodservice operations that utilize cook-chill systems. Heat-sealed pouches of soups, stews, sauces and gravies, or vacuum-packaged sous vide single portions of meat or seafood can be taken out of inventory and quickly reheated for service.


Gas rethermalizers provide fast heating and short recovery times. Water is preheated to an initial temperature of about 195°F. The packages of precooked food are placed in the cooking basket, lowered into the hot water and rethermalized until the foods reach serving temperature.


Specially designed control systems maintain water temperatures which ensure that the products do not overcook and that the foods can be held at the recommended service temperature for extended periods of time.

The Thermo-Tube heat transfer system gently brings products up to temperature to preserve the quality of the food inside the bag.
