TILTING SKILLETS   


Tilting skillets wear many name tags: tilting braising pans, saute pans, or fry pans. These different names, however, only scratch the surface of the skillet’s overall cooking potential.


Tilting skillets have a reputation as champions of versatility. They will brown or braise large quantities of meat such as ground beef quickly and easily, saute vegetables, or boil and simmer soups, stews and sauces. They can shallow pan fry chicken and fish and prepare a variety of griddle-cooked foods.


During cooking cycles, the skillet’s counterbalanced lid is raised or closed. To facilitate the removal of product you have a choice of either manual or electronic mechanisms that tilt the skillet to any angle ranging from 5° to 90°. A self- locking mechanism holds it in place. When the skillet tilts, the gas supply automatically shuts off.


Tilt skillets are equipped with a contoured pouring spout lip and a removal strainer that enables the operator to either empty all of the food product or simply strain the excess liquid.


Natural gas tiliting skillets can reduce cook times by up to 25%. For example, at breakfast, 75 poached eggs can be prepared in as little as 5 minutes; at lunch, 175 pounds of taco meat can be ready to serve in just over an hour; 100 pounds of beef roast can be cooked in 21⁄2 hours for dinner; and for dessert, 850 guests can be treated to pudding in just 10 minutes. Typical temperatures range from about 170°F to 450°F.


Generally the tilting skillet is a high-volume, heavy production line appliance. However, several manufacturers offer kettles with lower pan heights that make adding ingredients, stirring and cleaning easier.
