GRIDDLES
Gas griddles are the hard-working kitchen mainstays that can prepare a variety of breakfast, lunch and dinner menu items for foodservice operations ranging from fine dining to quick service to institutional. The continued dominance of gas- fired griddles is largely attributed to chef preferences for the quick demand response and performance benefits derived from the blue flame as well as the on-going popularity of foods prepared by grilling.
In recent years, gas equipment manufacturers made significant improvements to the original basic griddle concept. Burner systems are more energy-efficient, distribute heat more evenly and provide faster recovery. New gas griddle plate materials are engineered to spread heat more evenly and are easier to clean and maintain. An extensive choice of temperature control systems from simple manual or standard thermostatic controls to new snap-action and solid state electronic control systems enable operators to select temperatures from as low as 100°F to as high as 550°F. Most gas models have individual thermostat controls for each foot of griddle width.

1". The cooking surface is typically smooth but can be ordered grooved or with a combination of both.
Gas griddles come in a variety of sizes and are available in floor and countertop models. They can be combined with open burners or hot plates, and in a multitude of gas rangetop configurations.
One of the new developments in griddle technology is the plancha. This Spanish-style griddle, differs from traditional gas griddles that strive to deliver uniform surface temperature. Gas-fueled planchas purposely provide a hot center-plate surface for searing and a cooler perimeter for parking product.
