The gas Chinese wok range is a versatile piece of equipment that will not only stir-fry, but also fast- cook, boil, simmer, stew, steam, and saute. It is equally at home behind the scenes in a production kitchen or out front in a variety of display cooking applications.
Chinese range gas burners focus intense, high heat at the bottom of the simple, conical pan and easily generate high 650°F temperatures used for stir-fry cooking. They are designed to pass along a maximum of the generated BTUs to the foods being prepared. This fast heat transfer cooks foods quickly and maintains their flavor and texture. In minutes, meat, poultry, fish and vegetables can be turned into delicious stir-fried, steamed or tempura-cooked menu items.
Gas Chinese ranges have either a cast iron burner grate shaped to cradle the convex bottom of a wok pan, or a raised stainless steel ring that supports the wok sides and concentrates the gas burner heat. These designs allow chefs to tailor gas usage to the type and quantity of foods being cooked. By simply adjusting the circumference of the flame impinging on the wok bottom, a Chinese range can easily serve up a single portion or many portions at a time.
Because of the high burner output and high cooking temperatures, some gas wok ranges have a water- cooled top deck and some are insulated with firebrick. Most can be ordered with water fill faucets with swing spouts for easy filling and cleaning.

Gas stock pot ranges provide a lot of firepower in a relatively small footprint. These small but mighty ranges are specifically designed to rapidly heat large 20 to 80 quart stock pots. Their low working height makes it easier and safer for cooks to load, unload and monitor heavy pots of soups, chili, stews, and other kettle-cooked foods, which can weigh in excess of 100 pounds.
