This signature restaurant aims to provide a unique dining experience for local residents and those visiting the Isle of Wight. Professional chef Justin Brown heads up the kitchen, drawing on his time with celebrity and Michelin-starred chefs and his experiences running his own successful restaurants. A culmination of Justin’s creations, perfected techniques and ideas over the last 14 years, the restaurant offers a superb à la carte menu, eight-course tasting menus and a set-price lunch menu.

Based around the finest local and sustainable ingredients, much of which is grown around the Farringford grounds, dishes include the likes of confit organic salmon, dill, cucumber, rye and horseradish to start, with mains of rare-breed fillet of beef, braised short rib, fondant and Béarnaise or a risotto of locally roasted Island tomatoes, aged Parmesan and coriander shoots. Thrilled to be working with local produce he can only


describe as ‘amazing’, Justin puts quality first and certainly makes use of the contemporary and traditional techniques he’s learned. This is the first Island restaurant to offer a chef’s table experience where up to six guests can dine in the kitchen, served by the chefs themselves, and gain an insight into the workings of a professional kitchen. Sights here are set high, with the bold yet clearly achievable aim of accruing a Michelin star and three AA rosettes within the next couple of years. Watch this space.

The hotel has a great public bar-lounge offering free evening entertainment and a super selection of beers, wines and spirits. Here, visitors can also enjoy their daily cappuccino, a scrumptious lunch or, of course, the celebrated Isle of Wight cream tea – scones, clotted cream, strawberry jam, the works. The hotel’s contemporary Boaters Restaurant has been recently re-designed to a very high standard and offers a great daily changing table d’hote menu.
