Measuring tray accuracy offers a quality of services measurement. Tray Accuracy Rate = (Number of accurate trays ÷ Total number of trays checked) x 100 Errors include: 1. Missing an item (menu item, condiment, flatware) 2. Menu item does not match tray ticket selection 3. Extra item added that was not selected
Example
15 trays were checked for accuracy. 13 trays were accurate, and 2 trays contained errors. (13 ÷ 15) x 100 = 87% accuracy rate
TRAYS PER MINUTE FORMULA
Measuring trays per minute offers a productivity measurement. Determine the time elapsed for tray assembly from start to end times and divide the number of trays by the total number of minutes.

TURNOVER RATE FORMULA
The turnover rate is the percentage of employees leaving the organization over a certain period of time. Turnover Rate = (Number of employees who left ÷ Average number of employees in the department) x 100

During the last year, the Dining Services Department had an average of 26 staff members, and 5 staff members left the facility. What is the turnover rate?
