APPENDIX A | Focus on Formulas SUPPLY COST PER PATIENT DAY (PPD) FORMULA
Supply Costs per Patient Day (PPD) = Supply Costs for the month ÷ Total Patient Days for the Month* *Total number of Patient Days = Average daily patient census for the month x days in the month
Example
Supply costs for the month of October = $10,000 Number of patient days during the month of October = 125 clients x 31 days in the month = 3,875 patient days $10,000 ÷ 3,875 = $2.58 supply cost per patient day
TOTAL COST OF MENU FORMULA
Estimating the food cost of the entire menu by hand is a time-consuming process, so it is better left to foodservice management software. Using standardized recipes, portion sizes, ingredient lists with costs, and information regarding what is included in each meal or menu, a report can be generated that shows the food cost of entire menus.
