FORMULA Raw food cost per meal = Monthly food cost ÷ Number of meals served in the month Example
Food costs for the month of October = $32,000 Number of meals served during the month of October = 125 clients x 3 meals per day x 31 days in the month = 11,625 meals $32,000 ÷ 11,625 = $2.75 raw food cost per meal
RAW FOOD COST PER PATIENT DAY (PPD) FORMULA
Raw food cost per patient day = Monthly food cost ÷ Number of patient days* *Total number of Patient Days = Average daily patient census for the month x days in the month
Example
Food costs for the month of October = $32,000 Number of patient days during the month of October = 125 clients x 31 days in the month = 3,875 patient days $32,000 ÷ 3,875 = $8.26 raw food cost per patient day
RECIPE COST FORMULA
To cost a recipe, add together the cost of each ingredient in the amount specified on the recipe. This may involve calculating cost/ounce, cost per pound, or cost per each. Example Cost the following recipe: Spinach and Cheese Egg Bake | Yield: 48 servings Ingredient
