Desserts and Baking – Apple Crumble with Homemade Custard


Ingredients (serves 6)


Filling y 4 medium cooking apples y 50 g caster sugar y 2–3 tablespoons water Crumble y 175 g plain flour y 110 g butter y 110 g caster sugar y 50 g ground almonds y 1 tablespoon porridge oats y 15 g flaked almonds


Method


Filling 1. Preheat the oven to 180°C/gas mark 4. 2. Peel and core the apples, then chop them into chunks. 3. Place the apples, sugar and water in a medium saucepan. Stew the apples on a medium heat for 5–6 minutes until they are just starting to soften.


Crumble 4. Meanwhile, sieve the flour into a mixing bowl. 5. Cut the butter into cubes and add it to the flour. Rub the butter into the flour using your fingertips until it resembles breadcrumbs.


6. Stir the caster sugar and ground almonds into the mixture. Assembly


7. Pour the stewed apples into the ovenproof dish. 8. Gently spoon the crumble mixture onto the stewed apples. Use your spoon to flatten it down. 9. Sprinkle the oats and flaked almonds on top of the crumble.


10. Bake for 30–35 minutes until the crumble is golden on top. Custard


11. Meanwhile, place the cream and milk in a saucepan. Place the saucepan on a medium heat until the cream and milk are just warm.


12. Separate the egg by cracking it over a small bowl (to catch the egg white) and passing the yolk from one half of the shell to the other.


13. Place the egg yolks, sugar, cornflour and vanilla extract in a mixing bowl and beat together using a hand whisk.


14. Gradually pour the warmed milk into the bowl with the eggs, whisking continuously. 15. Pour the custard mixture back into the saucepan over a medium heat, stirring all the time until the custard thickens and coats the back of the wooden spoon. (This can take between 5 and 8 minutes.)


16. Remove the crumble from the oven and serve with warm custard. @HOME 91
