9. Meanwhile, cut the top off the onion and divide it in half through the root. Remove the skin and dice the onion very finely. Discard the root.
10. Wash the mushrooms in a colander and slice them. 11. Trim the rind off the bacon and chop it into small pieces.
12. Preheat the frying pan over a high heat, add the olive oil and heat it for 30 seconds. Add the onions and sauté for 3–4 minutes or until soft.
13. Add the bacon and mushrooms and fry for 4–5 minutes. Assembly 14. Spread the filling over the base of the pastry case. 15. Grate the cheese. Sprinkle 75 g of the cheese over the filling.
Food For Thought
Quiche originated in the medieval German kingdom of Lothringen, which the French later renamed Lorraine. The word ‘quiche’ is from the German Kuchen, meaning cake.
16. Beat the eggs in a measuring jug and add the milk and cream. Mix well. Season with a pinch of salt and pepper. Pour the mixture over the filling in the pastry case. Sprinkle the remaining cheese on top.
