Desserts and Baking – Wholemeal Soda Loaf
Ingredients (serves 6-8)
y 1 teaspoon butter for greasing y 350 g coarse wholemeal flour y 1 teaspoon salt y 1 teaspoon soft light brown sugar y 1 tablespoon wheatgerm y 50 g plain flour y 1 teaspoon bicarbonate of soda (baking soda) y 350 ml buttermilk y 2 tablespoons sunflower oil y 1 egg
Method
1. Preheat the oven to 180 °C/gas mark 4. 2. Grease a 2 lb loaf tin with butter. 3. Put the wholemeal flour, salt, brown sugar and wheatgerm into a mixing bowl. 4. Sieve in the plain flour and baking soda. Stir well to combine and make a well in the centre. 5. In a measuring jug, beat the buttermilk, oil and egg with a fork to combine. 6. Gradually pour the contents of the jug into the mixing bowl and stir to form a wet mixture. 7. Spoon the mixture into the prepared tin and flatten the surface using the back of a spoon. 8. Bake for 1 hour or until a skewer comes out clean.
9. Leave the bread in the tin for 5 minutes, then carefully remove the bread from the tin and leave it to cool on a wire rack.
