Desserts and Baking – Chocolate Muffins with Oreo Buttercream


Ingredients (makes 12-15)


Muffins y 60 g cocoa powder y 150 g self-raising flour


y 280 g light brown soft sugar


y 3 eggs y 150 ml milk y 130 ml vegetable oil


Oreo buttercream y 6 Oreo cookies y 175 g butter, softened y 350 g icing sugar


y ½ teaspoon vanilla extract


y 1–2 tablespoons milk To decorate y 6 Oreo cookies


Method


Muffins 1. Preheat the oven to 180 °C/gas mark 4. Line a muffin tin with 12 muffin cases. 2. Sieve the cocoa powder and flour into a mixing bowl. 3. Add the brown sugar and stir well to break up any lumps. 4. In a measuring jug, beat together the eggs, milk and oil.


5. Add the wet ingredients to the dry ingredients in the mixing bowl and mix using a wooden spoon until combined. (Be careful not to over-mix.)


6. Use an ice-cream scoop or two spoons to scoop the mixture into the muffin cases. 7. Bake for 20 minutes or until the muffins are well-risen and an inserted skewer comes out clean. Oreo buttercream


8. Meanwhile, place the cookies in a food processor and blend until smooth, or put them in a freezer bag and crush with a rolling pin.


9. Put the soft butter into a mixing bowl and beat well with an electric mixer until soft.


10. Sieve the icing sugar into the mixing bowl and beat well. Add the vanilla extract and stir well to combine. Add some milk if necessary. Stir in the crushed cookies.


Assembly 11. Remove the muffins from the oven and allow them to cool on a wire rack.


12. Put the icing into a piping bag fitted with your chosen nozzle. Once the muffins are completely cool, swirl on the icing, starting on the outside of the cupcake and continuing into the centre.


To decorate 13. Cut the 6 cookies in half and place half a cookie on top of each muffin.


Variation Chocolate icing: beat 100 g softened butter and sieve in 300 g icing sugar and 40 g cocoa powder. Add 30–40 ml milk and beat until smooth.
