Dinner – Chicken Goujons with Sweet Potato Chips
Ingredients (serves 4)
Chicken goujons y 2 tablespoons vegetable oil y 50 g plain flour y 2 eggs y 125 g breadcrumbs y 50 g Parmesan cheese y 4 chicken breast fillets
Method
Chicken goujons 1. Preheat the oven to 200 °C/gas mark 6.
2. Line two baking trays with greaseproof paper. Brush both trays with vegetable oil using a pastry brush.
3. Place the flour in a bowl. 4. Crack the eggs into a separate bowl and beat with a fork. 5. Pour the breadcrumbs into a large mixing bowl.
6. Grate the Parmesan cheese using the fine side of the grater and add it to the breadcrumbs. Mix well.
7. Cut the chicken into even strips.
8. Coat the chicken pieces in the flour, then dip them in the beaten egg and finally the breadcrumbs. Shake off the excess and lay the chicken goujons on the lined baking trays. Set aside.
Sweet potato chips 9. Line another baking tray with greaseproof paper.
10. Peel the sweet potatoes and rinse well. Cut into evenly sized ½ cm chips.
11. Put the sweet potato chips into a mixing bowl, sprinkle over the cornflour and mix well to coat the chips.
12. Put the chips into a sieve and shake off any excess cornflour.
13. Put the chips back into the mixing bowl and add the oil, garlic, smoked paprika and salt. Mix well.
14. Place the chips on the baking sheet, spaced apart to ensure they come out crispy.
Cooking 15. Goujons: bake for 30 minutes, until golden brown and completely cooked through.
16. Sweet potato chips: bake for 25–30 minutes, turning over halfway through, until crisp on the outside and soft on the inside.
To serve 17. Serve the goujons and sweet potato chips with tomato
ketchup or aioli (see page 156 for recipe) for dipping.
