Dinner – Marinated Beef Stir-Fry
Method Marinating the beef
1. Peel a 2½ cm piece of fresh ginger and grate it finely.
2. Put the rice vinegar, soy sauce, honey, grated ginger, chilli flakes and cumin into a bowl and whisk well.
3. Trim any visible fat from the minute steaks. Slice them into 1 cm strips.
4. Add the beef strips and stir to coat them in the marinade. Cover the bowl with cling film or a plate and place it in the fridge for 15–20 minutes to marinate. (You can leave it for 1–2 hours if at home.)
Stir-fry 5. Meanwhile, remove the top and bottom of the onion and peel. Cut in half and slice thinly. 6. Peel and crush the garlic.
7. Remove the top of the chilli, cut it in half and remove the white membrane and seeds. Dice finely. Be very careful when handling chillies as they can cause serious burns and irritation. Avoid touching your eyes and always wash your hands straight after or wear rubber gloves.
8. Peel the second piece of ginger and slice it into fine julienne strips. 9. Cut the pepper in half and remove the white membrane and seeds. Slice thinly.
10. Cut the baby corn in half lengthwise. 11. Slice the spring onions diagonally. Rinse the coriander and chop it roughly. 12. In a small bowl, mix the cornflour and water with a spoon. Set aside.
13. Preheat the wok over a high heat, add 1 tablespoon of oil and heat it for 30 seconds. Add the beef and stir-fry it over a high heat for 6–7 minutes until fully browned. Remove the beef from the wok and put it on a plate.
14. Put another tablespoon of oil into the wok, add the onion and stir-fry for 3–4 minutes until soft. 15. Add the garlic, chilli and ginger and stir-fry for 1 minute.
16. Add the peppers and baby corn and stir-fry for 4–5 minutes until al dente (fully cooked, but still firm).
Noodles
17. Meanwhile, boil the kettle. Pour the boiling water into a saucepan and bring it back to the boil. Add the noodles. Stir the noodles from time to time to stop them from sticking together. Cook for 3 minutes. (You should also check the packet for instructions on cooking times.) Drain the noodles in a colander.

Assembly 18. Add the beef back into the stir-fry and stir in the spring onions. 19. Add the cornflour mixture and cook for 1 minute. 20. Stir in the noodles and chopped coriander. Mix well.

Vinegar is an acid. When vinegar is used in a marinade, it tenderises the meat and breaks down the food’s surface, allowing the marinade be absorbed and add flavour.
