• Coeliac: use gluten-free flour and 1½ teaspoons of xanthan gum.
• Vegan/vegetarian: use vegan cheese, e.g. Violife; use vegan spread, e.g. Pure, instead of butter; use any natural yoghurt alternative, e.g. plain soya yoghurt, instead of buttermilk; omit chorizo.
