Desserts and Baking – Stained Glass Window Biscuits
Ingredients (makes 15-18)
y 100 g butter, plus 1 teaspoon for greasing y 1 tablespoon sunflower oil y 1 orange (zest) y 175 g plain flour y 1 teaspoon ground cinnamon y 50 g caster sugar y 1–2 tablespoons of milk y 12–14 hard, boiled sweets
Method
1. Preheat the oven to 180 °C/gas mark 4. Lightly grease two baking trays with a little butter, then line each with greaseproof paper. Using a pastry brush, lightly oil each sheet with a little sunflower oil.
2. Wash the orange, then use the fine side of the grater to remove the zest. 3. Sieve the flour and cinnamon into a large mixing bowl.
4. Cut the butter into cubes and add it to the flour. Rub the butter into the flour using your fingertips until it resembles breadcrumbs.
5. Add the zest and caster sugar to the flour/butter mixture and stir in. 6. Add enough milk for the mixture to bind and form a dough.
7. Sprinkle your work surface with flour. Tip out the dough and lightly knead to bring the mixture together.
8. Wrap the dough in cling film and leave it in the fridge to chill for 10 minutes. 9. Meanwhile, put the sweets in a freezer bag and crush with a rolling pin.
10. Remove the dough from the fridge and roll out on a floured surface until 1 cm thick.
11. Use a large cookie cutter to cut out the biscuits, then use a small cookie cutter to cut out the middle of each biscuit. Carefully place the biscuits on the lined trays using a fish slice.
12. Bake the biscuits for 5 minutes. Remove the trays from the oven and sprinkle the crushed sweets into the centre of each biscuit.
13. Put the biscuits back in the oven and bake for another 7 minutes until the biscuits are golden brown and the sweets have melted.
14. Put the trays on a wire rack and allow the biscuits to cool and harden completely on the trays before removing.
If you want to hang these from the Christmas tree, use a straw to cut a hole at the top of the biscuit before baking. Once cool, thread a string through the hole.
