Recipe Modification • Coeliac: use gluten-free pasta; ensure that your stock cube is gluten-free. • Vegan/vegetarian: use Quorn ‘mince’ (vegetarian) soya ‘mince’ (vegan), or 400 g drained, tinned lentils instead of minced beef; use Cheddar or Pecorino cheese (vegetarian) or vegan cheese, e.g. Violife.
• Diabetic: omit sugar or use sweetener, e.g. Stevia, instead. • Low-fat diets: use low-fat cheese; use less than 5% fat minced beef.
