Recipe Modification • Coeliac: use gluten-free soy sauce. • Vegan/vegetarian: use Quorn ‘chicken’ pieces or tofu instead of chicken; omit the fish sauce. • Diabetic: use sweetener, e.g. Stevia, instead of brown sugar. • Low-fat diet: use low-fat coconut milk.

Green curry paste y 1 green chilli y 1 × 5 cm piece fresh ginger y 4 cloves garlic y 2 lemongrass stalks y 1 lime y 4 spring onions
Curry y 1 red pepper y 1 courgette y 4 chicken breast fillets y 1 tin coconut milk
y 4 kaffir lime leaves y Small bunch fresh coriander y 3 tablespoons soy sauce y 1 tablespoon fish sauce y 3 tablespoons vegetable oil y 1 teaspoon brown sugar
Rice y 300 g jasmine rice Garnish
y 2–3 leaves fresh coriander per person
