Desserts and Baking – Marble Loaf


Ingredients (serves 8) Marble loaf


y 225 g butter, softened, plus 1 teaspoon for greasing


y 1 ½ heaped tablespoons cocoa powder


y 2 tablespoons hot water y 275 g self-raising flour y 2 teaspoons baking powder y 225 g caster sugar y 4 large eggs


Method


Marble loaf 1. Preheat the oven to 160 °C/gas mark 3.


2. Lightly grease a 2 lb loaf tin and line with a wide strip of greaseproof paper to cover the base and long sides of the tin.

y 1 heaped tablespoon cocoa powder


y 100 g icing sugar y 25 g butter y 1–2 tablespoons milk To decorate: y 25 g white chocolate

Food For Thought


Cocoa powder is an unsweetened powder produced by grinding the seeds of the fruit of a tropical evergreen tree called the cacao or cocoa tree.


3. Sieve the cocoa powder into a small bowl, add the hot water and mix using a teaspoon until it forms a smooth paste.


4. To make the vanilla mixture, sieve the flour and baking powder into a mixing bowl. Add the butter, sugar, eggs, vanilla extract and milk and beat with an electric mixer until blended.


5. To make the chocolate mixture, spoon half of the vanilla mixture into a separate mixing bowl, add the chocolate paste and stir well until evenly blended.


6. Spoon the vanilla and chocolate mixtures randomly into the prepared tin until all of the mixture is used up.


7. Use a spatula to gently level the surface. 8. Bake for 55–60 minutes, or until the cake is well risen and springy to the touch. Chocolate icing 9. Meanwhile, sieve the cocoa powder and icing sugar into a mixing bowl.


10. Melt the butter in a small saucepan over a medium heat, then remove it from the heat and stir in the milk.


11. Pour the milk mixture into the icing sugar mixture and stir thoroughly with a wooden spoon. Assembly


12. Remove the loaf from the oven and allow it to cool in the tin for a few minutes, then turn it out onto a wire rack, carefully peel off the greaseproof paper and leave it to cool completely.


13. Spread the icing evenly over the loaf. 14. Using the coarse side of a grater, grate the white chocolate over the top.
