Classroom-Based Assessment 2: Food Literacy Skills Brief


y According to our canteen staff, the foods that appeal the most to the students in our school include pizza, curry, burgers and chips. Although they are popular, these foods are not always nutritionally balanced, so if I choose something like this I will try to modify it so that it meets the healthy eating guidelines. It is important for teenagers to try new foods that they might like as this will help create healthy habits for life.


Time y I have ninety minutes to prepare, cook and serve my chosen main course. I must take care to choose a dish that I will have enough time to prepare. I have been practising my cooking skills over the last three years and have become much quicker at peeling and chopping vegetables. This has given me the confidence to choose a dish that challenges me.


y I have read the guidelines for the practical and I know how many marks can be lost if I don’t get my dish cooked on time or presented for evaluation.


3. Investigate possible solutions


I decided to seek advice from experts to help me choose suitable solutions, so I interviewed a public health nurse and looked at information from official sources such as Safefood and FSAI.


I also thought it was important to carry out a survey of my classmates to find out what kind of foods they like to eat, because even if the menu meets their nutritional requirements, it won’t be of any use if they won’t eat it!


4. Present two possible solutions


Based on my research, I came up with the following possible solutions for my Practical Food Skills Examination.


Solution 1 Starter


Homemade tomato and basil soup served with warm wholemeal soda bread


Main Course


Homemade pizza topped with ham, peppers, sweetcorn and grated Cheddar, served with baked sweet potato chips and a fresh garden salad.


Glass of ice-cold milk.


Solution 2 Main Course


Homemade grilled beef burgers in a wholemeal bap filled with crisp lettuce, sliced tomato, low-fat cheese and tomato ketchup, served with baked spicy potato wedges.


Glass of freshly squeezed orange juice. Dessert


Fresh fruit salad with mango, strawberries, kiwi, apple and blueberries, topped with 0% fat Greek yoghurt and homemade granola with seeds.
