Procedure: Weight phase A. Sprinkle Pickmulse™ into phase A under maximum stirring and maintain during 10 minutes (Rotor-Stator homogenizer). Add Propaneiol under toothed propeller for 5 minutes. Develop xanthan gum under medium stirring for 10 minutes. Prepare phase E and heat up to 50°C to melt butter. Cool down to 40°C. Pour phase E into phase ABCD under maximum stirring and maintain during 10 minutes (Rotor-Stator homogenizer) Properties: Aspect : white lotion; Viscosity: (Brookfield LV, 25°C, spindle 3, 6rpm, 1min): 10 000 – 20 000 cP; pH : 6.2– 6.5; Stability Tests: On lab batch, up to 3kg; Up to 1 month at 50°C; Up to 2 months at: Room Temperature, 4-8°C and 45°C.

Procedure: Combine first 3 ingredients with propeller mixing. Adjust pH to 5.0-5.5, then add remaining ingredients of Phase A. Premix Phase B, when homogeneous adjust pH to 5.0-5.5. Add Phase B to Phase A mix until homogeneous. Premix Phase C and add to Phase AB. Adjust pH to 5.0-5.5 if needed. Premix Phase D, add to Phase ABC. Fill components while main tank is mixing vigorously. Properties: pH 5.0-5.5, water thin 2 phase (brown clear bottom/clear water white top). Stability: 1 month at 50C, 5 F/T cycles.

Procedure: Heat phase A to 75°C while stirring. From 40°C, add phase B under agitation. If there are some lumps, you can homogenise briefly. As soon as the temperature of 75°C is reached, stir for at least another 30 minutes. Add phase C to phase A / B while stirring and continue stirring until everything has melted. Add phase D to phase A / B / C and homogenise for 5 minutes. Cool down to 25°C. If necessary, adjust pH to 4.0 – 4.5 using Sodium hydroxide 30% aq. sol. Finally, add phase F and homogenise for a further 2 minutes.

Procedure: Heat separately phase A and phase B at 80°C. Add premix B in A under low stirring. Cool down at 65°C and introduce phase C. Homogenize and at 60°C pour into an appropriate sphere mould. Put the mould in the fridge.
