Procedure: Phase A: add Disodium EDTA and Texturpure™ sa-1 to water with good mixing. add Sodium. Hydroxide and mix for 30 min, until fully hydrated. Phase B: disperse Phase B until smooth and free flowing and add to phase a. Phase C: heat to 65°C and add the ingredients in order above with good mixing, until smooth. Phase D: cool down to RT and add ingredients in order above. Phase E: add citric acid until pH 5.5-6.5

CLR™ Cirus and the sensory enhancer in the Phase A with Silverson
L5M-A (Emulsor Screen) - Speed: 5000 rpm, Time: 10 min - Stop in the middle and scrap the agglomerates on the silverson if necessary. Start to heat in a water bath at 65°-70 C. Add slowly oil phase to the water phase with mixing with Silverson (Speed: 5000 rpm, Time: 5 min). Below 45°C, add phase C (with Turbotest VMI Marine Blade). Adjust if needed to reach pH 5-5.5 Properties: Appearance: White butter after D7 RT pH: 5.39 Stability : passed 1 month stability at RT & T45°C Viscosity: 40800 mPa.s at D7

Procedure: Add Polyvinyl Alcohol slowly to the water while heating to 70°C and stir. Add B and stir until homogeneous. Add premixed phase C and D one after another with stirring. Adjust pH value to 5.5 if necessary. Add E as desired.
