The 4th edition of Nutrition Fundamental and Medical Nutrition Therapy represents the effort and hard work of professional volunteers and ANFP staff over a period of a year and a half from start to finish. At times, the volunteer commitment has required hours of time equivalent to a part-time job.
We could not have completed this textbook without the commitment of time and energy of both our technical editor, Diane Everett, and art director and graphic designer, Mercy Ehrler. Ms. Everett and Ms. Ehrler both are also responsible for the design and production of ANFP’s Edge and Edge Express publications. Both were a delight to work with on this project, each with their own expertise and keen eye with work ethics that never flagged. Cindy Zemko, Vice-President of Professional Development at ANFP, helped the team keep realistic expectations and focus on the project timeline. Her high standard of integrity guided her daily actions throughout this project, which boosted team performance overall. Her reviews strengthened not only the content of chapters but provided insight in the editing process. Finally, we dedicate this book to all future CDM, CFPPs. They may not yet fully understand the incredible importance and need of their expertise in the field, but I assure you that everyone involved in this project knows the value of and desperate need for the CDM, CFPP. The landscape of non-commercial foodservice continues to change, and that change will continually highlight the essential value of the CDM, CFPP in making high-quality food safe for our populations who are dependent on this profession.
