CHAPTER 01 | Translate Nutrition Science into Food Intake
The MyPlate approach provides a simple tool that is readily understood. Most people can select their own food choices from within each food group and make personal dietary choices that contribute to good health. The image is easy to conceptualize and makes a good educational tool as well.
It is important to note that MyPlate, like other food guides, is not absolute. As will be learned in later chapters, an individual’s nutritional needs vary throughout the stages of life. In addition, medical conditions can affect what constitute “ideal” dietary choices for any individual. In later chapters, the focus will be to learn more about how diets may need to be modified for certain disease states.
Chapter Summary
Nutrition is a complex science that has evolved in the United States from treating nutrient deficits that were common in the last century to the health consequences of nutrition excess that often occurs today. Scientists study the influences affecting food choice and the effects of nutrients on nutritional status. Their evidence-based research shapes the policy and programs the government and other agencies use to develop guidance for professionals to assure optimal nutritional status at the population level. It is the CDM, CFPP’s role to work alongside the registered dietitian nutritionists and those who have culinary expertise to translate the nutrition information from evidence-based science and various food guides into enticing menus and meals that provide the nutrients individuals need to maintain optimal health and wellness.
