Method 1. Melt the chocolate in a bowl over a pot of boiling water; allow to cool slightly.
2. Beat the whole eggs with the coffee before beating into the chocolate. 3. In a separate bowl whisk the egg whites to a soft peak. 4. Fold into the chocolate mix. 5. Pour into glasses and chill. Decorate with whipped cream and grated chocolate.
Apple and strawberry crumble Serve with fresh fruit.
Ingredients 100 g flour 50 g muesli 75 g margarine 75 g brown sugar
½ tsp cinnamon 3 large cooking apples 5–6 strawberries Juice of ½ lemon
Method 1. Preheat the oven to 190°C/fan 170°C/Gas Mark 5, and grease the pie dish. 2. Wash the apples, core, peel and slice. Hull and slice the strawberries. 3. Layer slices into the dish and sprinkle with half the sugar. 4. Cut lemon in half and squeeze over the apples. 5. Sieve the flour into the bowl. 6. Rub in the margarine with your fingertips until it resembles fine breadcrumbs. 7. Mix in the muesli and the rest of the sugar. 8. Cover the sliced apples and strawberries with crumble mixture. 9. Bake in the oven for 30–35 mins until the top is crisp.
Serve with custard, cream or ice cream.
