• Cream can be piped onto dishes or plates or poured into soup and swirled.
• Pastry decorations like leaves can be used on the top of apple tarts.
• Fruit can be puréed, made into a sauce or coulis, frosted or fresh, or arranged attractively on the dish or plate.
• Sugar can be sieved directly onto the dish or onto a cake through a doily to create an interesting pattern on a cake. Sugar can also be spun or made into icing (fondant, glacé or royal).
• Chocolate can be used in many ways to decorate sweet dishes – it can be melted, curled, grated and piped into decorative shapes.
