Emily Roux, 24, daughter of uber-chef Michel Roux Jr. She will work as a consultant
for Compass Group’s fine-dining division, having studied at
world-renowned Institut Paul Bocuse, where she focused on culinary arts and restaurant management.
What have been your next steps? I began working full time as a trainee chef while also attending cookery classes and workshops through the Chef Academy. During my course I had the opportunity to attend and help at events around London, where I was lucky enough to meet Albert Roux at a function in Wimbledon, work at prestigious sites and attend two masterclasses. I have also taken part in competitions organised by
Compass, as well as external competitions. Upon completion of my level 2 professional cookery course I was given a promotion and more responsibility. This has given me more confidence and freedom to develop my cooking skills and personal development.
How have you been able to progress your career in Compass? I think that doing something you love and enjoy definitely helps if you intend to progress in any career. I just really wanted to learn as much as I could and show that I am really interested in cooking, I think that my mentors noticed that and rewarded me for it.
What would you say to someone wanting to follow your footsteps? I would say go for it! You should nurture your passion by taking the opportunities given to you.
What are your culinary ambitions? At the moment I just want to learn more and understand what type of chef I want to be. Once I achieve that then I would like to work in other countries, building my knowledge and expertise. And in the long term I would love to open my own restaurant. I’d also like to win a lot of competitions!
