Higher Certificate in Arts


in Bar Supervision Programme Code: GA363 NQAI level: 6 | Places: 20 | Duration: Two years


Why study Bar Supervision? This programme provides students who are interested in developing a career in the bar sector with essential key skills and knowledge. Students can expect to work in both the Wine Geese Training Bar and the City of Galway Training Bar as part of their programme of study. In addition, students will study a number of business-related modules as this programme not only provides technical expertise, but also a solid business background for those wishing to pursue additional studies. Finally, students on this programme can expect to participate in a number of field visits to local and national properties which will support their college based learning activities.


Programme Modules This award will cover a number of modules including Facilities Operations, Bar Service, Wine Appreciation, Learning to Learn, Information Technology, Business Principles, Language, Culinary skills, Beverage Studies, Casual Dining, Environmental Health and Safety, Human Resource Management and Training, Tourism, Work- Based Learning, Food and Beverage Cost Control, Mixology and Product Development, Contemporary Beer Studies, Merchandising and Sales, Introduction to Accounting.


Career Opportunities


Graduates gain employment in local, national and international bars and hotels.


Other Essential Information • At the end of year one there is a twelve week mandatory work placement in an Irish hotel or other approved property, organised by the LINKS office in conjunction with the student.


Follow-on Studies


Upon successful completion of this programme graduates may progress to the final year of the Bachelor of Business in Bar Management (level 7).


Entry to this programme requires a minimum of an appropriate Level 4 qualification or recognised equivalent. Relevant work experience and/or life skills will be considered in lieu of a formal qualification through the RPL process. Applicants must be employed in a Fáilte Ireland registered establishment or in an establishment which is a member of the Restaurants Association of Ireland (RAI).


Other Essential Information


It is a requirement that students work full time in the hospitality industry throughout their two years of study. Upon successful completion of this programme, students will receive an Advanced Certificate in Professional Cookery.


Progression Participants who successfully complete this programme may progress to the HETAC Level 6 Higher Certificate of Arts in Culinary Arts, Year 2 (modular programme).


Professional Cookery


Traineeship NQAI level: 6 | Places: 32 | Duration: Two years Apply directly to the Admissions Office, GMIT


Why study Professional Cookery day release? The primary aim of this day release programme is to allow students to develop their skills and, while working in the industry, gain a FETAC level 6 qualification in advanced professional cookery.

Culinary Techniques: Culinary Skills, Classical Cuisine, Larder, Pastry Baking and Desserts, Menu Planning and Applied Nutrition, Food Science and Technology, Meal Service, International Cuisines, Personal effectiveness, Spreadsheet Methods, Volume Food Production, Contemporary Cuisine, Buffet, Pastry, Baking and Desserts, Menu Design and Applied, Culinary Food Safety Management, Gastronomy, Hospitality Business Systems, Producing a Culinary Event, Work Experience


Entry Requirements


Entry is by scored interview and points will be awarded to applicants who demonstrate that they are self-motivated and are willing to take on the rigor of this intensive programme of study.
