Pub manager Handles day-to-day running of the venue, keeps up to date with legislation, serves customers, recruits, motivates and trains staff, orders stock and handles deliveries.


Chef manager Usually in charge of a small brigade, but cooks for large numbers of guests. Nowadays, gastropubs are setting trends in casual fine dining.


Area manager Works with a large pub company and is responsible for a number of pubs. Ensures they are profitable and running smoothly.


Head office If you work for a managed pub company, you can go on to become business development manager or food development chef, or move into IT, finance, marketing or HR.


There is much more to working in a pub or bar than pulling a pint or sharing a joke with the regulars. While you’ll certainly need flair in those areas, those with ambition can also move on to greater challenges, such as leading staff, learning about food, wine and beer, managing profit and loss accounts, handling budgets, and working with suppliers. As luck would have it, you can learn all this on the job. A vast number of pub and bar managers started out in the industry working part-time as students and then couldn’t face leaving for a boring office job. The trick is to join a company committed to training. These employers offer great opportunities, up to general manager level and beyond. This sort of training is available across the spectrum – from large corporate pubcos such as Mitchells & Butlers to niche chains such as Oakman Inns and Yummy Pubs, as well as independent operators. We offer full training, and if you have the passion, determination and the right attitude, you could one day be running a million-pound business.” As well as development opportunities, you should


consider the type of environment that suits your personality. The local boozer still exists, but nowadays the choice also extends to gastropubs, family-friendly pubs, chic neighbourhood pubs and Irish-themed pubs, plus slinky bars, party bars, restaurant bars and beyond. As you gain in experience and progress up the ranks,


you’ll find the sector offers a whole range of aspirational roles, from area managers, finance directors and HR managers in the giant pubcos to top-level chefs and wine gurus in the niche operations.
