Procedure: Combine Phase A ingredients and heat to 75°C with stirring. Combine Phase B ingredients and heat to 75°C with stirring. Add Phase B to A using a propeller mixer or homogenizer. Homogenize for several minutes. Begin cooling while mixing with propeller mixer. At below 40°C, add Phase C ingredients one at a time. Continue cooling to room temperature. Adjust pH to 6.06.0—6.3 using Phase D. Properties: Light blue cream

Procedure: Prepare phase A1 by heating water to 75°C. Add Structure® XL and disperse under high shear (2000rpm) for 10-15 minutes. Maintain temperature at 70°C. Prepare premix A2 and add into A1. Disperse under medium shear (1000-1500rpm) until homogeneous. Prepare oil phase B and heat to 85°C to ensure that Compritol® 888 CG MB is well melted and well dispersed. Then set the temperature at 70°C. Proceed with the emulsion at 70°C of oil phase B into water phase A and mix under high shear (3000 rpm) for 10-15 minutes. Cool down under moderate mixing until 35°C. At 35°C, add phases C and D and mix well between each phase. Adjust pH if necessary with E.
