Procedure: Prepare and heat phase A and D at 75°C. Add phase B into A and develop the gel under high shear for 5 minutes (rotor stator homogenizer). Add C into AB and maintain under medium stirring until the product is homogeneous. Add D into ABC, increase agitation to emulsify. Keep under maximum stirring for 10 minutes (Rotor stator homogenizer)). Procedure: Mix A, heat to 70°C while stirring. Mix B, heat to 70°C while stirring. Add B to A while stirring, homogenise. Cool to 40°C while stirring, homogenise. Add the remaining ingredients separately while stirring, cool down to 25°C while stirring.
