Procedure: Heat water to 75°C and disperse the mixture of phase A2 under mixing. Prepare and heat phase B to 75°C. Under rapid mixing, add slowly phase B heated to 75°C to phase A1+A2 heated to 75°C. Cool under rapid mixing (dispersing mixer) and at about 25°C, add C, D and E. Complete cooling under rapid mixing (dispersing mixer 5 min). Properties: Aspect: butter cream, ivory pH 5.60 +/- 0.5 Viscosity Brookfield RV (spindle D, speed 5) : approx. 200 000 mPa.s after 24h.

Procedure: Heat A1 to 75°C and disperse Structure® XL for 15 minutes on high shear. Prepare premix A2. Add A2 into A1 on moderate shear. Heat B1 to 75°C. Make the emulsion : Add B1 into A on high shear (2500 rpm) for 10 minutes. Cool down on moderate shear. At 50°C add B2 on high shear for 5 minutes, then cool down. Add C bellow 40°C. Regulate pH with D. Properties: Aspect: White, fluid translucent serum pH 5.5 +/- 0.5 Viscosity Brookfield (spindle A, speed 5): approx. 8160mPa.s after 24h.
