Procedure: Mix ingredients of phase A under stirring. Add phase B into phase A and develop the gel during 5 minutes at maximum stirring (rotor stator homogeniser). Heat phase AB and phase D up to 70˚C. Add phase C into phase AB under moderate stirring. Add phase E into phase D just before emulsifying. Add DE into phase ABC and increase stirring at the maximum level (rotor stator homogeniser) and maintain during 5 minutes. Cool down under medium stirring below 40˚C. Add phase F and phase G one by one under moderate stirring. Check the pH and adjust if necessary at 5.2.
