Procedure: Heat phase A to 80˚C. Pre-mix phase B then add to phase A under high shear mixing and stir until homogeneous. Heat phase C to 80˚C then add to combined phase AB and homogenise at 6000 rpm for 3 minutes. Allow to cool under gentle stirring. Once below 40˚C, add phase D ingredients one by one, ensuring the mixture is completely homogeneous before adding each one. Adjust pH to 5.0-6.0.

Procedure: Heat phase A to 85˚C. Pre-mix phase B then add it to phase A and stir for 15 minutes at 85˚C until homogeneous. Heat up phase C to 60˚C under stirring until dissolved. Add it to combined phase AB and homogenise. Pre-mix phase D then add it to combined phase ABC and homogenise. Keep heating at 85˚C for 5 minutes under stirring and then pour into moulds. Leave to cool to room temperature.
