Procedure: In the main tank, weight and heat phase A at 80˚C under homogeniser (DF 400 rpm). In a separate tank, mix phase B under homogeniser DF 400 rpm and heat at 80˚C . Proceed to emulsification: add phase B into phase A at 80˚C, under homogeniser (DF 1500 rpm, 2 min; DF 2000 rpm, 2 min; then 800 rpm, 2 min). Pre-mix phase C at room temperature (DF 800 rpm) until the gel is formed, add to the main tank under homogeniser (DF 1000, 2 min). Cool the main blend under homogeniser (DF 500) until it reaches room temperature. Add phase D ingredients, one by one, and homogenise between each addition (DF 500, 5 min ). Add phase H ingredients, one by one, and homogenise between each addition (DF 800, 5 min). Add phase F ingredients, one by one, and homogenise between each addition (DF 200, 5 min ).

Procedure: Heat water to 80˚C and mix phase A under homogeniser. Disperse phase B into phase A under homogeniser for 10 minutes. At 60˚C, add phase C into phase AB under homogeniser. At 50˚C, pour into moulds. Record the temperature.
