while mixing at maximum available shear. Mix until fully hydrated. Maintain the water phase temperature at 75˚C. Combine phase B ingredients and heat to 75˚C. Add phase B oil phase to phase A water phase and mix thoroughly. Cool with mixing; add phase C ingredients when the emulsion is <30˚C and mix thoroughly.

mix until uniform. With slow speed/low shear prop mixing, add phase B and mix until uniform. Refer to the manufacturer’s specific recommendations for incorporating oleosomes. With slow speed mixing, to avoid air incorporation, add phases C, D, E and F in order, mixing until the batch is thickened and uniform.
