while mixing at maximum available shear. Mix until fully hydrated. Maintain the water phase temperature at 75˚C. Combine phase B ingredients and heat to 75˚C. Add phase B oil phase to phase A water phase and mix thoroughly. Cool with mixing; add phase C ingredients when the emulsion is <30˚C and mix thoroughly.
