Preparing for the Trip - Catering Objectives


The mission of a private jet caterer is to ensure the cabin crewmember has all of the tools for an exceptional onboard catering experience. Knowing the different packaging options is just one of the ways this is accomplished.


Other types of Packaging to consider are:


• Microwave containers - ask if a specific food item heats better in micro or oven. Be specific about the size of the micro/oven containers you would like.


• Dual use oven containers - ask if caterer uses these. • Plastic screw top bottles.


• Containers with lids. • Squeeze bottles. • Ziplocks. • Box - Self-contained meal - usually a plastic box with individual compartments generally for the pilots.


• Plated - Food item already on a plate and ready to serve like a Cobb Salad. It is faster to serve, already beautifully garnished however expensive. Will you be using the caterer’s plates or yours?


• Bowls - For example Yoshi Bowls for salads.


• Baskets - Bread or other items can be placed in a lined basket for example crackers for seafood cocktail etc.


• Trays - These can be silver, black, clear or melamine. This is for food that is meant to be beautifully displayed in front of the passengers for example; sliced fruit, crudite, cheese, finger sandwiches, deli tray, antipasto, caviar and petit fours. Order these according to seat groupings. If you have 6 passengers instead of ordering one fruit tray order 3 trays for serving 2 passengers. It is easier to serve that way and easier to store onboard.


• Ramekins - these will be glass, china or plastic. • Does the caterer have Eco-Friendly packaging options?


NOTE: All of the items listed above are considered “Throw Away” items by the caterer. Some flight departments have recycling programs in place or arrangements with the caterer to return items for a credit. Always ask before discarding these items.


Dressings should be ordered “BULK” in screw top bottles that are labeled. If ordering gravies and sauces separately from the main course ensure they are also in screw top bottles labeled but they will need to be heated separately. Determine if you have a microwave or a convection oven. If there is only a convection oven you will need to order small oven tins to heat your gravy and sauce in.


Note: All containers should be properly labeled and any oven tins should be double lidded with cooking directions written on them!
