International Standards / EthnicFoods - Reference


Kosher means "proper," and kosher foods follow strict Jewish dietary laws. “Kashrut” refers to the food that is considered “fit” or “acceptable” to be eaten by Jews. Certain types of foods are restricted from the diet. The law dictates how meats are to be butchered, what parts of the animal that can be eaten, as well as what animals are considered kosher. How foods are prepared are subject to certain rules in order to be considered kosher. For those that eat kosher on a regular basis, the rules are not that tough. But, since the majority of the world does not adhere to kosher laws, the diet can be tough to follow when serving meals onboard the aircraft.


Catering


• Inquire if the caterer can provide Certified Kosher Catering.


• The catering must come properly sealed. • The main course must come double wrapped for heating in a non-kosher oven.


• What are there limits when ordering Kosher food items?


Note: The best course of action is to use a caterer who can obtain Kosher food for your clients. If that is not possible and you plan on using a restaurant it can be difficult to find kosher foods on a menu of any restaurant that does not offer authentic Jewish cuisine.


If you are going to create the menu yourself buy foods such as eggs, fresh whole fruit and vegetables and fresh fish. The only rule that makes this difficult is the pots and pans that are used in the preparation. If necessary, purchase new cooking pan & utensils. Do not wash before use.


Seafood


The rules to stay kosher are pretty clear when it comes to seafood. Anything in the water that has fins and scales is considered

kosher. Shellfish, such as lobster, crabs, oysters, and mussels are not considered kosher and are restricted from the diet. Herring, carp, salmon, tuna, and other fish are permitted as part of a kosher diet. Fish is an important part of a healthy diet, so understanding and following this restriction is essential to a kosher diet.


Meats


Meats that are considered kosher have clear rules. Any land animal that is eaten must contain both qualities of cloven hooves and chewing its cud. Any mammal that does not contain both of these qualities is forbidden from the diet. The pig, camel, rock badger, and hare are not considered to be kosher, since they do not have both qualities. Cows, sheep, goats, deer, and bison are considered kosher.


Fruits and Vegetables


All fruits and vegetables are considered kosher. The only rule that applies is to wash the food properly before it is eaten. Insects are not considered kosher, so inspecting the food for insects before it is eaten is required. Certain foods are more likely to contain bugs, such as leafy greens, strawberries, and raspberries. These foods need to be thoroughly inspected for bugs and washed before eaten.


Butchering


In order for food to be considered kosher, it must follow strict butchering laws. Animals cannot be eaten if they died of natural causes, were killed by other animals, or had any disease or infection at the time of slaughter. A ritual slaughter known as a “shechitah” is performed by a “shochet” . A shochet creates a deep cut through the throat for a less painful and traumatic death to the animal. The blood is completely drained and the meat soaked in salt water before it is ready for preparation.


Preparation


When preparing the food, kosher cooking utensils must be used. The separation of meat and dairy require strict guidelines. Meats cannot be cooked in milk or cream,
