Preparing for the Trip - Catering Objectives


➡ Are the passengers traveling on business or for personal reasons? ➡ Medical Issues/Allergies. ➡ Special Needs passengers. ➡ Passengers Likes and Dislikes of food and beverages/Religious considerations. ➡ Children onboard. ➡ Pets onboard. ➡ Is there a recommended Caterer to use? If not, is there a budget? ➡ Will you need to arrange flowers?

If Dispatch has ordered or will be ordering catering you will need to determine; ➡ Trip #. ➡ What was ordered and ask for a copy of the Invoice. ➡ Call the caterer and confirm the order that was placed/use good judgement. ➡ Note delivery date and time and which FBO or location for delivery. ➡ Name of caterer and phone number. ➡ Who did the Dispatcher speak with. ➡ Is this what the passengers requested? ➡ Budgetary concerns as you may need to ask approval to add on to the order. ➡ Ask questions or for a Passenger Profile Sheet.


All flight departments and passengers tastes and preferences vary.


Passengers can, and often do, request catering from specific locations, such as: • An aviation catering company. • 5 star restaurant or Hotel restaurant. • Gourmet Markets, Whole Foods, Wild Oats, Gelson’s, Dean and Deluca ... making everything fresh.


Know what your options are available to you ... do your homework first! NEVER ASSUME ANYTHING ABOUT BUDGET...ALWAYS ASK!


Aviation catering is not cheap but most caterers are top quality and reliable. So which aviation caterer should you use? Use a HIGH END PROFESSIONAL CATERER.


➡ Ask Dispatch/Flight Department/PIC/Lead FA. ➡ Most FBOs have a link to caterers on their website. ➡ Read websites - NBAA.org. ➡ Use apps - V.I.P. Catering. ➡ FBO will suggest companies - ask when you are on a layover. ➡ NBAA Conferences - most high end caterers attend. ➡ Ask other corporate flight attendants.


Using a HIGH END safety conscious Caterer is the safest way to provide food for your passengers. They have to follow food safety procedures mandated by state or country. They use vehicles equipped with refrigeration units to transport their food.


All reputable caterers have their menus available online which you can access now by computer, smartphone or tablet. Ask for seasonal suggestions. Give them a “per pax” budget. Ask for an “estimate” or a preliminary quote.
