Procedure: Prepare and heat phase A and D at 75°C. Add phase B into A and develop the gel under high shear for 5 minutes (rotor stator homogenizer) . Add C into AB and maintain under medium stirring until the product is homogeneous . Add D into ABC, increase agitation to emulsify. Keep under maximum stirring for 10 minutes (Rotor stator homogenizer). Cool down with tooth propeller and add E (one by one) at T°C<40°C. Properties: Aspect: White thick cream ; Viscosity: (Brookfield RV, 25°C, spindle 94, 50 rpm, 1min): 10 000 - 14 000 mPa.s; pH: 5.0 - 5.5
