Procedure: Prepare Phase A . Sprinkle A1 phase into phase A under high stirring during 5 min. (rotor stator homogenizer) . Prepare phase B and mix until homogeneous . Add B to A and heat until 70°C during 5 min . Let cool down and add C under slow stirring to avoid entrapment of air bubbles . Add D one by one under slow stirring until the product is homogenous Adjust pH if necessary . Add E under slow stirring until the particles are dispersed. Properties: Aspect: Light beige translucent gel with white particles in suspension ; Viscosity (Brookfield LV, spindle 4, 6 rpm, 1 min): 40 000 – 50 000 cPs ; pH: 5.3 – 5.5

Procedure: Prepare and heat phase A at 75-80°C. During heating phase, sprinkle Xanthan Gum into Water and stir until the gel is fully developed. Prepare and heat phase B at 75-80°C. Add B into A under maximum stirring (Rotor stator homogenizer) and maintain for 10 minutes to emulsify. Cool down under medium stirring below 35°C and add C and D one by one. Adjust the pH if necessary. Properties: Aspect: Light beige fluid cream ; Viscosity: (Brookfield LV, 25°C, spindle 3, 6rpm, 1min): 10 000 - 20 000 mPa.s; pH: 4.70 – 5.30
