Owain Llwyd Jones, 27, is general manager at the Fishes in North Hinksey, Oxfordshire, which is owned by Peach Pub Company. Here’s why his boss, Hamish Stoddart, Peach co-founder, thinks he’ll go far: “When Owain joined Peach from Oxford Brookes University as
a graduate trainee, we instantly felt he was a special character. He arrived with raw talent and an evident love of pubs but at that time not necessarily the skills to make a difference. Owain grabbed the opportunity to learn about the industry and gain restaurant knowledge, service skills and management ability. He set about developing himself personally to acquire these skills. “We set him two years of extreme challenges at Peach, including
opening the James Figg in Thame and turning round the Old Mill in Berkhamsted, and at each stage his enthusiasm and natural flair, combined with a little coaching from the Peach team, proved to him and us that this man is a star in the making. “Owain rightly decided he should experience other challenges with other employers, and chose to do it with Mitchells & Butlers and the Hilton Cardiff – two big hitters. I know he learnt a lot and came back to us more rounded, organised and capable of taking on the challenge we set him. “He aims to spend his next three or four years building the Fishes to be the best gastropub in Oxford and ultimately in Oxfordshire. So far he has added £4,000 to average weekly sales, improved staff retention and developed two young managers to be promoted elsewhere in Peach. “We now see Owain as one of Peach’s future stars and hope
he’ll ultimately go on to run one of his own pubs or become a partner with us.”

Bar staff Team leader Assistant manager Pub manager Duties include looking after the day-to- day running of the venue, keeping up to date with issues and legislation, serving customers, recruiting, motivating and training staff, ordering stock from suppliers and handling deliveries.
Chef and kitchen roles Just as with restaurants, there is a variety of different chef and kitchen roles in pubs, from entry-level jobs such as kitchen porter or commis chef through to sous chef, head chef or chef manager. For a full explanation see Careers in Restaurants on page 18.
Area manager Works with a large pub company and is responsible for a number of pubs. Ensures they are profitable and running smoothly.
Head office If you work for a managed pub company, you can go on to become a business development manager, food development chef, or move into IT, finance, marketing or HR.
