Britain’s best managed pub and restaurant chains are delivering consistent growth and are leading the way for economic recovery, according to the latest data from the Coffer Peach Business Tracker, which analyses
monthly performance data from 28 operating groups. Collective like-for-like sales rose
2.2% in July – the 16th consecutive month of positive growth for the sector.
top tips on getting the right job
Find out whether most of the staff are happy, or are they looking for another job?
Have you got a clear idea of what your duties will be?
Will you get tronc or tips? (A ‘tronc’ is an arrangement for the pooling and distribution to employees of tips and/or service charges.)
Will you get any weekends off?
Does it have a proven training programme?
You’d be surprised how many pub and bar managers started out in the industry as students, working behind a bar in the evenings while they did a degree or vocational course in an unrelated subject during the day. Before they knew it, they were hooked by the social whirl and seduced by the career opportunities – their original career choice just seemed boring. If you are a graduate, consider
applying to one of the multinationals that offer fast-track graduate training courses. Mitchells & Butlers’ two-year course, for example, could see you running a business with an average annual turnover of £1m a year and managing a team of up to 50 people before you’re 30. personality. Local boozers mean you’ll have to organise quiz nights and remember regulars’ names. If you want something a bit racier, you could try a themed pub – Irish pubs are fast-paced, as are Revolution bars. Or there are the family-oriented pub chains such as Hungry Horse, the upmarket pubs where the focus is on food and, last but not least, slinky, sophisticated bars such as those in top hotels. Your age might hold you back from
working behind the bar, but once you’re 18, the sky’s the limit…
