escribed as “the ultimate warewashing technology,” HYDROPOWER is more than a new machine launch for DIHR. It
represents a shift in how professional kitchens can tackle their toughest washing challenges. The compact 2-in-1 solution combines a high-pressure utensil washer and a hood-type dishwasher in a single footprint, meaning no need for granules, while delivering exceptional performance. “Twenty years ago, we developed the granule machine,” explains Carlo Brunati, commercial director at DIHR, headquartered near Venice, Italy. “Now we’re innovating again. Instead of granules we use water power, so no pollution from microplastics.” That evolution is significant.
Where traditional systems relied on plastic granules to remove burnt-on soil, HYDROPOWER harnesses the force of high-pressure water jets to achieve the same result — without soaking and without abrasive media. At its core, HYDROPOWER is engineered for versatility. The machine features two separate wash circuits: a high-pressure pump dedicated to trays and baking pans, and a low-pressure pump for standard dishes. Eight wash programs — four for trays and four for plates — allow operators to move seamlessly between heavily soiled gastronorm pans and everyday crockery.
feature. “Just three minutes to remove stubborn dirt from a gastronorm pan, which frees kitchen teams to focus on higher-value tasks,” says Andrea Squizzato, who is also DIHR’s R&D manager alongside Vezzaro. Despite its power, the machine remains compact — smaller than a traditional warewasher and only slightly larger than a standard hood- type model. Designed for canteens, caterers, airports and modern restaurant kitchens, it delivers high output without demanding excessive floor space.
Stable pressure ensured Central to HYDROPOWER’s performance is DIHR’s innovative PLUS system, which guarantees a consistent rinse even with low inlet water pressure. The system incorporates an atmospheric boiler that maintains water at 85°C throughout the rinse cycle, refilling only after the cycle is complete. A rinse pump and break tank ensure stable pressure and prevent backflow.
“It assures constant rinsing
water and pressure,” Vezzaro explains. “Stability in the rinsing result is very important.” HYDROPOWER also features a final spinning phase, rotating the basket at high speed to remove residual water. “The spinning function helps remove

the residual water after rinsing, and improves drying and turnaround,” says Squizzato. Optional enhancements further
elevate efficiency and ergonomics. The improved two-step LIFT system, powered by an electric motor, automatically raises the hood at the end of the cycle. “Nowadays the ergonomic side is very important,” notes Squizzato. “The lift makes the work easier and safer.”
The HR heat recovery unit captures steam generated during operation to preheat incoming cold water, delivering immediate energy savings while improving the dishwashing environment. “You get two advantages in one,” explains Brunati. “Saving energy and getting rid of steam in the kitchen, which is a big issue.”
Reliability as standard HYDROPOWER is fully integrated with DIHR’s optional Connectivity 4.0 system and app, enabling remote monitoring of cycles, alarms and HACCP data. “The service staff can know in advance which component is better to replace,” says Vezzaro. With in-house production spanning sheet metal cutting and folding, robotic processing and final testing, every unit is rigorously
checked before dispatch to ensure quality and cost control. “Each machine is tested and each testing result is recorded in our system continuously,” says Squizzato. “Reliability is a big point that makes us stand out from the competition and the reason why we distribute to more than 120 countries worldwide.” The machines have also been field-tested across multiple markets and foodservice environments and the response has been overwhelmingly positive. “Clients have tested it and appreciated the cleanliness and performance,” Vezzaro adds. Looking ahead, the team sees HYDROPOWER as the starting point for further development. “It is significant for our vision of the future,” Vezzaro concludes. “Intelligent, versatile and connected.”
