requirements for a ship,” says Burkard. “We have equipped several other ships
as well, so our partner already knew what appliances to rely on, making it a smoother process,” he adds. The project’s main challenges lay in balancing client demands with technical requirements, while maintaining cost efficiency and preserving the ship’s high-end feel. “The challenge onboard is balancing technical demands and client wishes,” adds Verschure. “Building a ship is difficult, with many pipes and tanks, more complex than land kitchens. Coordinating drains, exhausts and walk-ins requires precise cooperation with many stakeholders.”
The nuts and bolts Ambach’s equipment is ideally suited for ship kitchens, thanks to its unique joining system. The modular design securely connects appliances, creating a flexible layout that is easy to clean, an important advantage in space-constrained marine environments. Conical rails, metal tracks shaped like a cone, and rubber seals tightly join each module, ensuring watertight connection. Seamless worktops eliminate edges or gaps, speeding up cleaning while reducing detergent use for a more hygienic, cost-effective kitchen. Ambach’s joining system uses round disks
and a fork-shaped connector, combined with internal rubber seals to link equipment. This
creates seamless, watertight joints that further enhance hygiene and simplify cleaning. The modular setup also allows equipment to be reconfigured if a restaurant concept or menu changes in the future. “It was very important that people in the galley wouldn’t waste time cleaning,” says Verschure. “Everything in the galley is closed. All worktables and surfaces are joined tightly. This makes the galley clean and easy to maintain after food preparation.” The new galley equipment delivers higher cooking capacity, boosting efficiency while offering a more robust platform for reliable, stress- free operation. The project also included the installation of a recessed griddle plate, primarily
